Curried Butternut Squash Soup by Chef Jules
3c Butternut Squash, Dumpling or Acorn
1 c diced onion & celery
2 carrots chopped
3 sprigs of cilantro
2 Tbs fresh ginger
2 Apples your choice
1 qrt Vegetable Stock
1 can lite coconut milk
1 Tbs each Curry powder. &back cinnamon
1 tspn each all spice &back cumin
salt &back pepper. to taste
Put everything in a soup pot
stirring and cook til fork tender. Puree and then add coconut milk.
Garnish with fresh cilantro or cilantro oil and pepitos.
Cilantro Oil is 1 c Olive oil pureed with 1 bunch of fresh cilantro or your favorite herb.
Pepitos can be found in the produce section at you local grocery store and are shelled pumpkin/squash seeds.
