Lightly Blackened Grouper with Orange Sauce from Josee Lanzi
4 (6oz) pieces grouper filet
½ teaspoon sea salt
½ teaspoon blackened seasoning
1 tablespoon extra virgin olive oil
1 teaspoon butter
2 oz cream cheese 1/3 less fat
¼ cup half & half
¼ orange juices
¼ cup dry white wine
2 tablespoon cilantro chopped fine
2 navel oranges skinned & diced small
Pinch sea salt & crack black pepper
On stove top in a sauté pan on medium high heat melt butter with olive oil. Season grouper pieces with sea salt and blackened seasoning add grouper to the pan and cook on the first side 6 minutes turn and cook other side an additional 6 minutes or until the fish starts flaking and white through.
In a small sauce pan add cream cheese and half & half until cream cheese is melted add orange juice, white wine cilantro and cook for 2 minutes add diced oranges. Plate grouper pieces and top with orange sauce.
