Here's Iris' Recipe for the best Royal Icing.
2 lbs powdered sugar (32oz) 1/3 cup meringue powder 1 cup water 2tsp. Vanilla extract 2tsp. Almond extract
Put the sugar and meringue powder into the bowl of your mixer or a large bowl. Pour the water over the top start your mixer on the slowest speed until everything is incorporated, add the extracts and turn your mixer to a medium speed for 1 minute. Continue mixing at a medium to high speed for an additional 5 minutes. Royal icing should form peaks. Cover icing immediately and leave it covered until you use it. It will dry if you leave it uncovered. You can keep this icing for up to three days but mix it again before you use it.
